Hello again from Saint Mary's College! Although the quality of the food  here is very good, the changes in the menu are not significant... so my suitemates and I decided to have a "family dinner" and cook in our townhouse. We cooked homemade rigattoni bolognese as starter and shortbread for dessert. To be honest, everything was delicious and I want to share with you the reciepe we used to cook the shortbread. Its cheap, easy and very very good!! So, let's get started; you are going to need the following ingredients: - 3/4 pound of butter - 1 cup of sugar - 1 teaspoon of pure vanilla extract - 3,5 cups of flour - 1 teaspoon of salt - 1 chocolate tablet Once you have all the ingredients, preheat the oven to 350 degrees F. In a bowl, put all the butter in a bowl and heat it in the microwave for 30 seconds or so, until its soft. Then add the sugar and mix it. You can use an electric mixer, but we did it with a fork and it was fine. Once the butter and the sugar are mixed together, add the flour, the salt and the vanilla. Mix  it well untill all the ingredients are nicely combined and form a consistent dough. Use your hands to mix it. That's the scottish way! Place the dough on a flat surface and even it with a rolling pin (we did not have one so we used a toilet paper roll, works perfectly!!) Once your dough is flat (1/2 inch thick) cut it in pieces. Spray some extra sugar on top of each cookie and put them in the oven for 20 or 25 minutes. In the meanwhile, melt the chocolate tablet in the microwave. Once the cookies are baked, spread some melted chocolate on top of your cookies and let them cool for 20 minutes... Volia! your cookies are ready to eat! I hope you enjoy this recepie!
